Blueberry Oatmeal Muffins

Ingredients


1 1/4 cup Oat Flour

1 cup quick oats

1/2 cup packed brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon baking soda

1/4 teaspoon nutmeg

2 teaspoons ground flax seed

1 egg

1 cup plain low fat greek yogurt

1/4 melted butter

4 oz apple sauce (I use a jar of baby food)

1 cup blueberries

Directions


In large bowl, combine the first 9 ingredients.

Combine the egg, yogurt and butter; stir into dry ingredients just until moistened.

Fold in blueberries.

Use paper liners in muffin tray - fill- bake 18 minutes @ 400 degrees.


Yields 1 dozen.
